Vegan Bircher Muesli

Think you don’t have time to have a healthy and fulfilling breakfast each morning? Think again. As you may have already gathered from previous posts, I love to meal prep. It’s a game changer. Particularly in the mornings, I need to ensure I have something nourishing, tasty and easy to grab between getting home from gym and leaving for work by 6:45am. This Vegan Bircher Muesli is the perfect solution. It makes three serves and will last in the fridge for three days. It takes me five minutes to make it on a Sunday night and it means I have breakfast covered for Monday, Tuesday and Wednesday! The recipe is super customisable, you can add whatever toppings you are in the mood for and it’s easy to double the recipe to make additional servings.

Vegan Bircher Muesli
Prep Time: 10 minutes
Cook Time: 8 hours refrigeration
Makes: 2-3 servings
Ingredients
1 cup of rolled oats
1 cup of plant based milk (I use organic oat milk)
1 cup of coconut yoghurt
1 medium-large red apple, grated
1 tablespoon of chia seeds
1 teaspoon of maple syrup
2 tablespoons of walnuts, chopped
2 tablespoons of sliced almonds
3-6 strawberries, quartered
Method
In a large bowl, mix together the oats, milk, yoghurt, grated apple, chia seeds and maple syrup ensuring everything is well combined
Divide the mixture into 2-3 glass jars (depending on the desired serving size)
Top each serving with the chopped walnuts, sliced almonds and fresh strawberries
Place the lids on the jars and refrigerate overnight (for 8 hours)
In the morning, simply take out of the fridge and enjoy!
